Barley Salad

We had so many tins of barley last year and everyone asked the same thing - "what can we do with it?" Kevin Cameron came up with this brilliant recipe and shared it with us.


3 tins of barley

Butternut Squash




Herbs and Spices to taste

Rapeseed Oil or Olive Oil

Salt & Pepper to Season


Drizzle squash in oil and seasoning then roast for 20 mins in the oven.

Heat oil in a pan and stir in barley for five mins. Season.

Add squash and other ingredients and stir together before serving.
