We get a lot of mangoes at the Larder. This nourishing recipe for mango lassi is delicious and healthy. Caroline Roger of Nutrishilicious explains how to make it. This is such an easy recipe and will give you a total pick-me-up.
2 cups of plain Greek yoghurt
4 cups of chopped mango (Can use frozen)
1 ripe banana
2 tbsp. Honey and more for drizzling
2 tsp. Grated fresh ginger
1/2 cup of rolled oats
Juice of 1/2 lemon
1 tsp. Pure vanilla extract
3 tsp. Chia seeds, plus more for topping
A few pinches of ground turmeric
In a blender, combine the yoghurt, mango, banana, honey, ginger, oats, lemon juice, vanilla and 2 tsp. Chia seeds.
Blend completely until smooth, stir in the remaining 1 tsp. Chia seeds.
Pour into glasses and too with a drizzle of honey, sprinkle of chia seeds and turmeric.
Any leftovers can be stored in fridge for 4-5 days.
